Spanish Chicken and Rice Ingredients: 1 cup frozen green peas 1/2 coarsely chopped green pepper 1 coarsely chopped onion 1 8 oz. can tomato sauce 1/2 cup cold water 3/4 cups uncooked regular white rice 1 tsp. dried thyme 1/8 tsp. pepper 3 slices uncooked bacon; cut in quarter pieces 1 1/2 to 2 lbs. skinned chicken legs and thighs Pinch of paprika Directions: Remove peas from freezer and thaw at room temperature. Using favourite utensil and/or grill, stir together green pepper, onion, tomato sauce, water, rice, thyme and black pepper. Arrange separated bacon slices over rice mixture, covering evenly. Place chicken over bacon. Sprinkle evenly with paprika. Cover, then cook for 20 minutes. Uncover, then remove chicken to large, hot serving plate. Stir thawed peas into rice and spoon around chicken on plate. This culinary dish goes to good friends of mine.

Mexican Beef Tortillas Ingredients: 1 1/2 to 2 lbs. thinly cut strips round steak 1 tsp. garlic salt 1/2 tsp. chili powder 1/2 tsp. cumin 1/2 cup each of green and red pepper strips 1/2 small onion; cut in rings and separated 1/2 cup cold water 1 pkg. tortilla (or taco) shells Directions: In favourite cooker or pot, mix beef with garlic salt, chili powder and cumin. Place meat arranged  in a donut shape in cooker or pot, if possible, cook on your barbecue grill for best results. Leave inner centre space open. Add peppers, onion and water. Place a single layer of aluminum foil on  top of food. Cover and cook on/in favourite microwave or grill for 15 minutes. Uncover, and serve  with warm tortilla/taco shells. Garnish with lettuce, tomatoes, avocado and sour cream, if desired.  Makes 4 delicious servings. Rice Pudding Ingredients: 2 beaten eggs 2 tbsp. white granulated sugar 1 1/4 cups cream (or milk) 1 1/2 cups cooked white rice 1/2 cup raisins (if desired) 1/2 tsp. cinnamon 1/4 tsp. nutmeg 1 tbsp. butter (or margarine) cut in pieces Directions: In a 1 quart (4 cup) microwave safe glass or plastic bowl, add the eggs, then blend in cream/milk and sugar. Then add and stir in remaining ingredients. Cover bowl or glass with a single layer of  aluminum foil. Pour in 1/2 cup hot water into your favourite cooker or pot, then place covered bowl or glass into the water. Place pot in microwave on high power for 10 minutes. Remove pot and let stand for 3 minutes. Then uncover and carefully remove bowl or glass from cooker or pot. Serve pudding warm or cold, as a dessert or snack. Makes 6 servings. Cook in microwave for an additional 3 minutes if using a lower wattage oven, as mentioned in previous recent recipes. German Potato Salad Ingredients: 4 medium (3 cups) pared and thinly sliced potatoes 8 slices uncooked bacon (cut in quartered pieces) 1/3 cup diced onion 1 diced celery stalk 1/2 cup vinegar 1/4 cup cold water 2 tbsp. flour 1/2 tsp. salt 1/4 tsp. pepper *Parsley flakes (if desired)* Directions: Combine all ingredients and add to favourite cooker or pot. Cover and microwave on high power for 15 to 20 minutes. Remove from small oven and uncover, then stir gently before serving.  Garnish with parsley, if so desired. Makes 4 delicious servings, allow to cool to ideal temperature of course as well prior to serving, salads are not hot, none that I'm aware of, lol. This dish is best cooked in a 400 to 500 watt microwave, for a maximum of 20 minutes total as aforementioned above. I must thank one of my late German uncles for this wonderful creation. Apple-Stuffed Pork Roast Ingredients: 2 1/2 to 3 lb. bone-in sirloin or loin pork roast 1 large chopped apple 1/2 medium chopped onion 1 stalk chopped celery 1/4 cup dry bread crumbs 3/4 tsp. paprika 1/2 tsp. dried sage 1/4 tsp. pepper 1 tbsp. melted butter (or margarine) 1/3 cup cold water 1 tbsp. flour mixed with 2 tbsp. cold water Directions: Cut 2 large pockets in roast near the bone, but not all the way through, then set aside. Combine apple, onion, celery, bread crumbs, paprika, sage and pepper; then stir in butter or margarine.  Stuff pockets with approx. 2/3 of apple mixture and then secure with toothpicks. Place roast in favourite cooker or pot and add remainder of the mixture, add water and cover. Microwave on high for 20 to 25 minutes, then remove from microwave and uncover. To serve, place roast in  slices on heated serving plate, remove and discard toothpicks. Stir flour mixture into cooking juices. Microwave on high uncovered for 1 1/2 to 2 minutes, or until thic...
