Rice Pudding

Ingredients:

2 beaten eggs

2 tbsp. white granulated sugar

1 1/4 cups cream (or milk)

1 1/2 cups cooked white rice

1/2 cup raisins (if desired)

1/2 tsp. cinnamon

1/4 tsp. nutmeg

1 tbsp. butter (or margarine) cut in pieces

Directions:

In a 1 quart (4 cup) microwave safe glass or plastic bowl, add the eggs, then blend in cream/milk

and sugar. Then add and stir in remaining ingredients. Cover bowl or glass with a single layer of 

aluminum foil. Pour in 1/2 cup hot water into your favourite cooker or pot, then place covered

bowl or glass into the water. Place pot in microwave on high power for 10 minutes. Remove pot

and let stand for 3 minutes. Then uncover and carefully remove bowl or glass from cooker or pot.

Serve pudding warm or cold, as a dessert or snack. Makes 6 servings. Cook in microwave for an

additional 3 minutes if using a lower wattage oven, as mentioned in previous recent recipes. If

so desired, use a Nordic Ware tender cooker for this and previous recipes in this blog. As my late

dad's family was originally from Scandinavia, before immigrating here to Canada way back in

1951, I have always known through my family tree the origins of those three notable countries,

*I must admit in all honesty that 2025 has been one of my more difficult years as far as remaining

creatively inspired and motivated; whether it's another "block" or simple lack of mojo, whatever

you wish to call it, it's been a struggle indeed. If I don't return to this or my other newer previous
