I have two more classics before the summer, enjoy.

German Potato Salad

Ingredients:

4 medium (3 cups) pared and thinly sliced potatoes

8 slices uncooked bacon (cut in quartered pieces)

1/3 cup diced onion

1 diced celery stalk

1/2 cup vinegar

1/4 cup cold water

2 tbsp. flour

1/2 tsp. salt

1/4 tsp. pepper

*Parsley flakes (if desired)*

Directions:

Combine all ingredients and add to favourite cooker or pot. Cover and microwave on high power

for 15 to 20 minutes. Remove from small oven and uncover, then stir gently before serving. 

Garnish with parsley, if so desired. Makes 4 delicious servings, allow to cool to ideal temperature

of course as well prior to serving, salads are not hot, none that I'm aware of, lol. This dish is best

cooked in a 400 to 500 watt microwave, for a maximum of 20 minutes total as aforementioned

above. I must thank one of my late German uncles for this wonderful creation. He and his

wife always loved to cook, especially on their barbeque and small kitchen grill, may they both

forever rest in peace, along with the other relatives that I've lost; I miss you all. Until next time,
