Apple-Stuffed Pork Roast

Ingredients:

2 1/2 to 3 lb. bone-in sirloin or loin pork roast

1 large chopped apple

1/2 medium chopped onion

1 stalk chopped celery

1/4 cup dry bread crumbs

3/4 tsp. paprika

1/2 tsp. dried sage

1/4 tsp. pepper

1 tbsp. melted butter (or margarine)

1/3 cup cold water

1 tbsp. flour mixed with 2 tbsp. cold water

Directions:

Cut 2 large pockets in roast near the bone, but not all the way through, then set aside. Combine

apple, onion, celery, bread crumbs, paprika, sage and pepper; then stir in butter or margarine. 

Stuff pockets with approx. 2/3 of apple mixture and then secure with toothpicks. Place roast in

favourite cooker or pot and add remainder of the mixture, add water and cover. Microwave on

high for 20 to 25 minutes, then remove from microwave and uncover. To serve, place roast in 

slices on heated serving plate, remove and discard toothpicks. Stir flour mixture into cooking

juices. Microwave on high uncovered for 1 1/2 to 2 minutes, or until thickened. Pour small

amount of thickened sauce over the meat. Serve remaining sauce separately, this tasty creation
