Today's favourite; chicken, with another twist, enjoy.
This classic recipe reminds me of an early series episode of "Everybody Loves Raymond",
when Ray and Debra initially met each other and started dating, an excellent sitcom I feel.
Lemon Chicken
Ingredients:
4 halved chicken breasts (approx. 2 1/2 lbs.) skinned, boned, thinly sliced
1 cup chicken broth
2 tbsp. lemon juice (even just a hint of lemon is good)
2 or 3 chopped garlic cloves
2 tbsp. chopped green onion
1/2 tsp. salt
1/4 tsp. pepper
1 tbsp. cornstarch
1/2 thinly sliced lemon
Directions:
Combine chicken slices, broth, lemon juice, garlic, green onion, salt and pepper in favourite
cooker or pot. Cover and place in microwave on high power for 25 minutes. Uncover lid.
Remove chicken with slotted spoon to a heated serving plate. In a separate container, blend
in cornstarch with a small amount of hot chicken liquid (broth), stir into remaining chicken
liquid. Add lemon slices. Microwave pot uncovered on high power for 2 to 3 minutes, or until
mixture is thickened. Pour prepared liquid over the chicken. Garnish with additional lemon
slices and green onion, if so desired. Serve with rice or noodles.
Makes 4 to 5 servings. A 400 to 500 watt microwave oven requires extended cooking time of
