I'm back with a few more family favourites.

Chicken and Herbed Wild Rice

Ingredients:

2 lbs. chicken thighs (6 or 7 pieces, skinned)

3/4 cups chicken broth

1/2 cup white wine (or water)

1/2 cup uncooked regular rice

1/4 cup uncooked wild rice

1 diced celery stalk

2 tbsp. chopped onion

1 tsp. dry tarragon

1/2 tsp. dry parsley

1/2 tsp. dry basil

1/2 tsp. salt

1/4 tsp. pepper

Pinch of paprika

Directions:

1. Combine all ingredients in tender cooker (or desired pot) placing chicken thighs on top.

2. Sprinkle with paprika.

3. Cover and microwave on high power for 25 minutes.

4. Uncover asap.

5. Garnish with fresh herbs, if desired.

6. If using a kitchen oven, cook on top at high power for an additional five minutes.


Makes four or five delicious servings. For best results, do not cook longer than 35 minutes, enjoy.
